Keto meals that don’t suck

My wife jumped on the Keto bandwagon with the Xyngular program and has enjoyed quite a bit of success in weight loss with it. But I haven’t been real impressed with her cooking suggestions for me, and getting the kids to eat any of the stuff she wants to eat is almost impossible. So I’m compiling this list, and I’ll be adding to it as I find more…

And let me just get this out there: Cauliflower sucks. It’s not a legit substitute for potatoes, rice, or pizza crust. It tastes bad, and when you cook it the whole house smells like a truck stop bathroom. So my recipes are 100% cauliflower free.

Tex-Mex Keto Tostadas

These things are melt in your mouth good and really straightforward with just a few ingredients. You’ll need to have a Perfect Bacon Bowl maker that you can get from Amazon Prime or your local supermarket.

Ingredients:

  • Perfect Bacon Bowl Maker
  • 1 Package of bacon.
  • 1# of smoked pulled pork or smoked chopped beef brisket.
  • Gucacamole
  • Pico de Gallo
  • Mexican blend cheese
  • Hot Sauce of your choice (optional)

Makin’ Bacon:

We start by making 6-8 bacon bowls with the Perfect Bacon Bowl maker. Just follow their directions. Don’t buy center cut, thick cut, or any other snobby bacon. You need it to be kind of fatty and you need the fat edge along one side for the bowl to seal up properly. Store brand bacon is your best bet. But first, take this opportunity to start warming up your smoked pork or brisket. Nothing ruins good BBQ meat like heating it up too fast, even when you are just re-heating something that was already smoked.

Fill’er Up:

The rest is easy. Add your BBQ meat. You can use store-bought pre-smoked and cooked stuff, but I use the stuff I smoke myself. Top with some guacamole, Pico, a sprinkle of the shredded Mexican blend cheese, and throw on some hot sauce if you are into that sort of thing…

Crock Pot Creamy Ranch Chicken

This one is super easy. Just dump everything in the crock pot around mid day on low and you are good to go by dinner time. It’s great for days when we have 18 different practices to go to and everyone is eating at different times. I don’t have a photo of it yet, I’ll add one the next time I make it.

Ingredients:

  • 1.5# of chicken breast tenderloins
  • 1 8oz package of cream cheese
  • 4 tablespoons butter
  • 3 tablespoons of ranch dressing mix
  • Green Giant Zucchini Veggie spirals
  • Regular spaghetti noodles for your carb eaters

Just toss everything but the veggie spirals and pasta into the crock pot and put it on low until the chicken is done, then pull it with a couple of forks and stir everything up real well. When you are ready to eat, nuke the zucchini spirals and cook some spaghetti noodles. Serve the creamy chicken over the top of the spirals/noodles.
